Everything began when, over twenty years ago, Roberto Cipresso decided to buy and restore the ruins of an old farmhouse in one of the most beautiful places in the Montalcino countryside. At the foot of Sant’Angelo in Colle the farmhouse of Poggio al Sole is precisely flanked by the vineyard of just one hectare of extension, that produces the grapes destined to become Brunello di Montalcino. The Rosso di Montalcino on the other side, is the fruit of another small and suggestive vineyard, placed near the Sant'Antimo Abbey.
Both vineyards foresee low unitary productions and a careful and accurate agronomic management. This management is inspired by the utmost respect for agroecosystem natural balances and the achievement of the greatest possible sustainability. The cultivation practices are carried out entirely manually, completely avoiding the use of machinery, so to keep the soil alive and soft, and respect its natural structure. The various winemaking operations take place in the Roberto Cipresso’s laboratory-cellar, located just outside Montalcino. The winery practices, as well as the agronomic works, undergo variations according to the specific yearly climatic conditions. The final aim is to obtain wines that are the most faithful reflection of the terroir of origin, of the personality of their author, and of the enchanting landscape to which they belong.
